Chicken and Vegetable Patties

TÜRKÇE İÇİN TIKLAYIN

You may have noticed that it's been a while since I published any dessert or bread recipe. We can blame this on the weight I gained! My desire to try and publish new recipes for the blog, Turkey visit, lunch & dinner tables and invitations while mom was here and birthdays resulted as 3-4 kilos so my researches on glycemic index, calorie calculation, wii fit and balance board games have gained much speed :)

The biggest disadvantage of making bread with Thermomix is the challenge to set limit while slurping freshly baked and warm ultra delicious bread which you've just made!
The unlucky thing is this has just happened after I bought a bread recipes book. I have many bread recipes which I'd like to try and adapt for TM. As soon as I loose a couple of kgs I am planning on going back into bread business, but moderately this time! :)

70g parmesan, roughly chopped (50 + 20)
15g parsley leaves
A few sprigs of chives
500g water
20g onion
200g potatoes
120g zucchini
80g carrots
450g chicken breast
100g bread crumbs (20+80)
1 egg
Salt, pepper
Extra virgin olive oil

  • Grate parmesan for 10 seconds by speeding up from 2 to 9 and set aside
  • Chop parsley and chives for 7 seconds on Speed 7. Set aside
  • Put water, onion and salt in TM Bowl. Bring to boil for 7 minutes at 100°C on Speed 1
  • In the meantime cut potato, zucchini and carrot into small pieces. Place them in Varoma Bowl. Season with a little salt
  • Cut chicken breast into 2-3 pieces and place in Steaming Basket
  • Steam all for 20-22 minutes at Varoma Temperature on Speed 2
  • Set all steamed veggies and chicken aside. Let them cool down
  • Mix 50g of grated parmesan with chopped parsley-chives for 5 seconds on Speed 4
  • Chop chicken roughly. Start TM31 at Speed 5. Throw in chicken in pieces through the hole of TM Lid and chop around 15-20 seconds in total
  • Add steamed potatoes, carrot and slightly squeezed zucchini into chicken mixture
  • Add egg, 20g of bread crumbs, salt and pepper. Mix for 20 seconds on Speed 3-4. (If you feel any need increase the speed and/or duration)
  • Cover oven tray with baking paper and brush with a little oil
  • Get apricot sized pieces from the mixture and roll into a ball shape
  • Coat with first bread crumbs and then parmesan. Flatten them out a lttle and place them in tray
  • Drizzle with a little oil
  • Bake for 20 minutes at preheated oven at 190°C. (After 10 minutes passed turn them and continue to bake)
  • You can serve with steamed vegetables or salad

Afiyet olsun
